REPRESA — A weathered “Bill of Fare” dated June 15 to June 21, 1925, and signed off by one E.F. Clark, Steward of the General Mess, has resurfaced online, offering a rare, itemised look into what men incarcerated at Folsom State Prison in California were fed a full century ago, and the document is now circulating widely under the hashtags #prisons and #oldmenus.

What The Document Shows

Checks by ValidViewNetwork confirm that the menu, printed under the header “State Prison At Folsom, Prison Mess,” lays out a full week of breakfast, dinner and supper for the prison’s population, beginning Monday, June 15, 1925 and running through Sunday, June 21, 1925.

Brown beans appear at nearly every single meal across all seven days, alongside white bread, which shows up almost as consistently, a pairing that findings show functioned as the nutritional backbone of the entire week’s feeding programme.

Breakfasts leaned on stewed fruit, hot buns, cracked wheat, rolled oats and, on three separate mornings, hamburger steak with brown gravy paired with steamed potatoes.

Dinners were heavier and more varied, featuring Spanish stew with vegetables, corned beef hash, pig knuckles with lima beans, lamb curry and rice, cod fish with potatoes in cream, and a Saturday spread of beef stew with vegetables and baked spaghetti.

Suppers were noticeably lighter throughout the week, typically soup, brown beans and bread, macaroni vegetable soup, split pea soup, Spanish beans and tapioca among them.

Sunday, the final day on the sheet, broke from the weekday format entirely, listing a single more generous breakfast and supper built around hamburger steak with brown gravy and roast beef with brown gravy, apple sauce and cookies, without the usual three way meal split.

The Institution Behind The Menu

ValidViewNetwork gathered that Folsom State Prison, located in Represa near the city of Folsom, about 20 miles northeast of Sacramento, opened on July 26, 1880, when the first 44 incarcerated men arrived by train after travelling upriver by boat from San Quentin.

It is California’s second oldest prison after San Quentin, and it holds the distinction of being one of the earliest maximum security prisons built anywhere in the United States, as well as the first American prison to have electricity.

By the time this 1925 menu was drawn up, Folsom had already been operational for 45 years and had grown considerably from its original 44 inmates, having housed around 900 people within just its first two decades.

Constructed largely from granite quarried on site by the inmates themselves, the prison was designed to relieve overcrowding at San Quentin and to hold, in the language of the period, long term and habitual offenders.

Still Standing, Still Operational

What makes the menu more than a historical curiosity is that Folsom State Prison never closed.

ValidViewNetwork reports that the institution remains fully operational today under the California Department of Corrections and Rehabilitation, now classified primarily as a medium security facility housing thousands of inmates, a significant shift from its founding identity as one of the country’s original maximum security institutions.

Over its now 145 year history, the prison has held some of America’s most well known incarcerated figures and gained global cultural attention in January 1968 when musician Johnny Cash recorded two live performances there, later released as the album “At Folsom Prison.”

Documents like the 1925 mess menu offer something official histories rarely capture, the granular, everyday texture of institutional life a century removed from the present.

Brown beans on a tin plate, seven days running, say as much about the economics and philosophy of incarceration in 1925 as any policy record could, and it is precisely that ordinary detail, preserved by chance and signed in a steward’s own hand, that has caught the attention of history and prison interest communities online today.
